Road-tripping through T or C, and stopped for breakfast. A worthy stop for sure. I had the Huevos Rancheros, & R had the Bistro Benny (which is only available on weekends).  

The Huevos is an excellent re-imagining of the dish, though if you have the gene that makes cilantro unpalatable, it's not for you. I'm not partial to the herb, so I asked for it not to be put on the dish, it's an integral part of the crema though. Since it's not a genetic aversion, and the cilantro in the crema is not overpowering, the result was a mighty fine breakfast.

The Benny, on the other hand, is a little sweet. On a whim, R requested a side of the chipotle aioli. It's good that he did, because it cuts the sweetness of the Benny perfectly.
