Taco del Gnar

If I could, I would exceed the 5-star limit for this amazing find, for several reasons:
1) Ambiance: The building is classic late-victorian railroad/mining town construction, so the wood floors and bar are likely restored original construction. The walls are in basic white to compliment the rich, old, dark wood, and the tables are an assortment of unassumingly comfortable function. Decoration is sparse, but each piece is a subtly tongue-in-cheek working of the humble taco into popular culture. Late 20th/early 21st century garage/grunge/funk is the audio of choice, loud enough to make out the words, but not so loud that you have to shout to your tablemates.  I'm pretty sure we all know that one person who just epitomizes cool without ever trying. This is the restaurant version.

2) Staff: Every single person we interacted with on the other side of the counter was warmly professional while being completely laid-back. When we were indecisive about our initial order, there was no sign of the frustration or annoyance I would have felt being on the opposite side of the exchange. Then, it was less than 5 minutes from completion of ordering to arrival of meal. Seriously stellar cooking/serving time for sit-down.

3)Food: Saved the most important for last. These were not my abulita's tacos. This is fusion cuisine at its finest, with zero pretensions, just perfect execution. I'm pretty sure I'd get a palpitation over a $4+ taco most anywhere at home, but the ingredient list comes before the price on the menu, so you know you're getting prime quality ingredients in your perfectly handheld parcels. Actually biting into my Pork Belly taco was downright life-changing. I knew with that one bite that my standards for judging every other gastronomic adventure for the rest of my days had just been elevated. I can't even put the experience into words properly because I'm too busy simply salivating at the memory several hours after going back again and again for that one dish. Raz swears the Lambrizo is actually the better taco with its perfect blend of spices that accentuate rather than mute the essential lambiness, but I beg to differ. The Pork Belly is a truly awe inspiring creation. As I said, we went back again and again, and have tried over half the menu. We're already working out how to make future trips to CO route through Ridgway so that we have an excuse for the nearly 6-hour drive necessary to repeat the indulgence.
