Really mixed experience... 

We came in our road clothes due to the "casual attire" note, only to find ourselves mildly underdressed. Cultural differences i guess... No worries about that, really, since the hostess was super welcoming and our servers were all polite.  The 45 minute wait for a table without a reservation was what we'd expect anywhere this popular on a Saturday night. 

I'm guessing prior guests had issues, as we had just barely reviewed the menu when the house manager came to check if our server had been by. I replied honestly that we'd been seated so far, and that was all. Less than 30 seconds later, our server was there to take our drink order, and we had our drinks within 2 minutes of that. We ordered steaks, of course, and I talked R into the Spinach dip appetizer.  

We barely had time to wash up and have a tiny nibble of bread before the dip arrived. When it did, just wow! The ratio of artichoke hearts to spinach to cheese was ideal. Most places that do this dip make you hunt for your elusive artichoke, not West Texas Chophouse! I don't think we could have missed artichoke in a bite if we tried, not that we would have, because they were awesome!

We were about halfway through the dip when the massive steaks arrived. When the server asked if we would like to cut them open to check doneness, however, we discovered a glaring omission: we had no forks. We brought this to her attention, and she headed back to the kitchen with the assurance that we would have our flatware soon. Approximately 5 minutes later our original server came by to check in, and we repeated the statement about forks. He too disappeared toward the back. Third time's a charm, and the house manager came to the rescue and brought us our forks himself.

That hurdle jumped, we tucked into our steaks. My T-bone was probably a little on the rarer side of medium rare, but no worries since that's precisely what I was hoping for. R's ribeye, on the other hand, was a medium well when medium was requested. The first bite was perfect though, so he made no complaint, and I had plenty of juices to share from the ginormous T-bone...

We had another wait for the check, but that did give us time to pack away the remainder of the spinach and artichoke dip for later, as either our hunger was greater than our actual belly capacity, or the portions really are that much bigger in Texas. 

My steak and that spinach artichoke dip were worth a 5-star rating. However, too many little things conspired to keep the overall experience down in the 4 range. We regret nothing, and hope strongly that the disorganization issues are fully resolved when we are next in this area and contemplating dinner.
